Here is a simple easy to follow guide to making broccoli and stilton soup, I discovered that I can make 5 portions of this soup for less cost than 5 portions out of a tin!


Ingredients can vary depending on your personal taste so don't be afraid to add a little more or less of something as you wish. I personally think this has a much better taste than any from a supermarket because I can make it to how I like it.. Happy cooking!

Ingredients;

1 or 2 florets of broccoli

150g blue stilton

1 large onion

4 tbsp. double cream

1 ltr hot water

1 veg stock cube

2 tbsp. butter

Pinch of salt

Heat 2 tbsp butter in a large pan and gently cook 1 onion, chopped, for 4-5 minutes until softened.

Add broccoli (Chopped) and cover (occasionally stiring) for 5-10 minutes

Add stock cube dissolved in 1 ltr hot water


(OPTIONAL take pan from heat and blend with a hand blender **note- make sure there is enough free depth in pan to avoid scalding whilst blending)

Bring to the boil, then simmer for 12-15 minutes or until the broccoli is very tender.


Crumble 200g Blue Stilton into the soup and stir until melted.
